I've found it helpful in a couple of classes to pull in a world map. This has been particularly helpful for me with newer students when I'm still trying to get them to open up and feel more comfortable. You can have them circle where they've been and tell you about it (what did they like, how was the food, etc.). After that you can ask them to show you where they want to go and have them talk about why.
I've found that if I do the same thing and show them where I've been/want to go and why, they seem to be more open. I guess it's because they feel like they know something about you now as well.
